Summer Black Bean, Avocado Salad Recipe

Sharing my favorite summer salad recipe. This salad is always a big hit to bring to back yard summer dinner parties.

INGREDIENTS
Use all organic ingredients preferably

  • 1 box or can of black beans
  • 1 package of grape tomatoes
  • 1 small bag of white corn
  • 1 avocado
  • 1 fresh lime
  • Fresh mint leaves
  • Himalayan pink or sea salt to taste
  • Black pepper to taste

Add can of black beans to large bowl.
Slice grape tomatoes in half and add them to mix.
Add desired ratio of white corn to mix.
Chop desired amount of fresh mint to mix. Usually one table spoon is enough Add juice of one lime to mix. Lime zest (optional)
Salt and pepper to taste.
At this point stir the salad mixing the lime juice, salt, and pepper together well before adding the avocado.
After mixing. Dice the avocado and gently incorporate the avocado into the mix.
You can eat right away or chill if preferred.
